Ingredients (Serves 2)
1 Salmon Fillet
1 Bunch Fresh Mint
1 Packet Cherry Tomatos (150g)
1/2 Lebanese Cucumber
1/2 Red Capsicum (Bell Pepper)
1/2 Yellow Capsicum (Bell Pepper)
1 Teaspoon Reduced Salt Tamari Sauce
Cooking Instructions
Place salmon fillet into a plastic bag and marinate with 1 teaspoon tamari sauce, allowing to sit for minumum 20 minutes.
Pre heat a non stick fry pan to medium and once warm, place salmon fillet on pan and cook to your liking.
While salmon is cooking, cut tomatos in quarters and then cucumber and
capsicum (bell peppers) into thin strips. Tear apart mint leaves from
stalks and place everything into a large salad bowl, toss around and
then distribute evenly into two bowls.
Once salmon fillet is cooked, cut in half, then cut into cubes and distribute into salad bowls.
Serve.
