Ingredients (1 Serving)
2 Whole Eggs
3 Egg Whites
200 grams Field Mushrooms
1 Tablespoon Fresh Basil
1 Teaspoon Fresh Garlic
Cooking Instructions
Pre heat a non stick fry pan onto low/medium for 2-3 minutes.
While pan is heating, cut mushrooms into thin strips and garlic into
tiny pieces. Break basil leaves into pieces and put aside in a small
bowl.
Whisk eggs and egg whites together with garlic and put aside.
Place mushrooms onto pan and cook for 2-3 minutes each side or until wilted.
Once mushrooms are cooked, remove from pan and then slowly pour egg mix onto pan.
Cook for 2 minutes, then pour mushrooms and basil leaves on one half of
omelette and flip the other half over over to create a burrito style
omelette.
Allow to cook for another minute or so then carefully remove from pan.
Top with some more fresh basil and serve.
