Ingredients:
300 grams Chicken Breast
200 grams Fresh Spinach
1/2 Bunch Broccollini
150 grams Green Beans
1 x Small Red Chilli Pepper
1 x Small Green Chilli Peppper
1 x teaspoon Lemon Grass Paste
10 grams Fresh Ginger
1 Tablespoon Extra Virgin Olive Oil
Cut ginger and chillis into tiny pieces and mix into a bowl with olive oil and lemongrass paste.
Pour into a plastic bag and then put chicken breasts into the bag to marinate.
Pre heat a non stick fry pan on medium and once heated, place chicken
breasts onto pan and cook until chicken is completely cooked through the
middle.
Place beans in a pot of water and bring to the boil.
Add broccollini to steamer while beans are boiling and steam for 2-3
minutes.
Remove chicken from the pan and place onto a plate.
Once chicken is removed, add spinach to the pan with a tablespoon of
water and toss until cooked.
Add vegetables to plate and serve.
