Depression

What is Depression?

Occasionally we all feel sad or blue, but normally these feelings disappeared quickly. When these feelings stay behind and delayed leaving then it should be a sign of depression disorder that includes sadness, hopelessness and/or despair and in this case it is difficult to perform the daily functioning properly.
Causes of Depression

Depression can be a genetic problem or it can also happen due to stressful life events like divorce, separation, death of a family member, financial difficulties, job loss or other traumatic events. Chemical changes can happen by substance abuse that affects the mood and some medical conditions such as hypothyroidism can lead to depression. Some early life experiences, like school related problems, death of parents, chronic illness, issues with biological development, neglect, rejection, and psychological, physical and sexual abuse can increase the chance of this disorder later in life.

Caramel Pudding Cake

This showpiece sponge cake topped with a soft and heavenly caramel pudding is definitely a show-stopper
kind of cake. It is both rich and delicious! Amazingly, the cake and pudding are baked together, and somehow during the baking process, the cake part separates from the pudding into two distinct layers whilst remaining attached!
This recipe will make one 8" cake.
Ingredients & Instructions
First, grease an 8" pan. Preheat the oven to 170 C and prepare a water bath. A water bath is basically a big pan (that will comfortably hold your cake pan) which is filled about halfway with boiling water.
Proceed with preparing the cake.
Caramel Topping
60gm sugar (grinded/castor)
3 tbsp. water
First, add 1 tbsp. of the water into the sugar. Melt on VERY LOW heat until the sugar melts and caramelises to a golden brown colour. Immediately add the remaining 2 tbsp. of water, stir well and pour this syrup into your greased cake pan.
Pudding
500ml milk (fresh)
70gm sugar (grinded/castor)
4 eggs (at room temp)
1 tsp vanilla essence
Mix the milk with the sugar until all the sugar is melted. In a separate bowl, beat the eggs with vanilla essence lightly. Do not over-whip the eggs, if they become frothy, your pudding will not have the best/smoothest texture. It will end up with small holes in it. Mix the eggs into the milk+sugar and stir gently until well combined. Pour onto the caramel in the pan.
Sponge Cake Base
3 eggs, separated into whites and yolks (at room temp)
90gm sugar (grinded/castor)
100gm plain/all purpose flour
30gm butter (melted)
2 tbsp. milk
1 tsp. vanilla essence
First, beat the egg whites with half the sugar, a pinch of salt and half the vanilla until stiff peaks are achieved. Set aside.
In a separate bowl, beat the egg yolks with the remaining sugar until thick, pale and creamy. Add the milk, remaining vanilla and melted butter and stir. Sift the flour into this mixture and fold/stir it in very gently until combined.
Next, add a third of the egg white mixture into this batter, whisk it in, then add all the remaining egg white mixture and fold it in using a spatula. Make sure to use a light hand to combine as any heavy handling or vigorous mixing will deflate the batter.
Gently add dollops of this airy batter into the cake pan on top of the pudding mixture and try to level it out as much as you can. Do not worry if things get muddled up a little bit, the layers will separate during baking.
Place this pan in the water bath and stick the whole thing into your preheated oven. Bake for about 40minutes.
Remove the pan from the water bath and set it on a wire rack to cool. Do NOT invert the cake out of the pan at this point. Allow it to cool completely, then cover with foil and refrigerate at least for a few hours or preferably overnight. Then place a plate over the pan and turn it over.
Serve chilled and Enjoy! :)

Mushroom and Basil Omelette

Ingredients (1 Serving)


2 Whole Eggs
3 Egg Whites
200 grams Field Mushrooms
1 Tablespoon Fresh Basil
1 Teaspoon Fresh Garlic

Cooking Instructions

Pre heat a non stick fry pan onto low/medium for 2-3 minutes.

While pan is heating, cut mushrooms into thin strips and garlic into tiny pieces. Break basil leaves into pieces and put aside in a small bowl.

Whisk eggs and egg whites together with garlic and put aside.

Place mushrooms onto pan and cook for 2-3 minutes each side or until wilted.

Once mushrooms are cooked, remove from pan and then slowly pour egg mix onto pan.

Cook for 2 minutes, then pour mushrooms and basil leaves on one half of omelette and flip the other half over over to create a burrito style omelette.

Allow to cook for another minute or so then carefully remove from pan.

Top with some more fresh basil and serve.

Chicken, Ginger and Mint Cauliflower Rice

Ingredients (3 Servings)

300 grams Cauliflower
300 grams Chicken Breast
300 grams Green Beans
200 grams Snow Peas
1 Medium Zucchinni
20 grams Fresh Ginger
20 grams Fresh Mint
1 Tablespoon Coconut Oil (Or extra Virgin Olive Oil)

Cooking Instructions

Cut chicken breast into thin strips and cook on a small pan until the chicken is just cooked through.

While chicken is cooking, pre heat a second fry pan (large pan) on low heat and pour one tablespoon of oil onto pan.

Break cauliflower into small pieces and bit by bit, place in food processor and process until cauliflower turns fluffy.
(Depending on the size of your processor you may be required to empty and re fill again to use all cauliflower)

Place cauliflower into a bowl and then cut ginger into strips and place ginger and mint into food processor and process.

Spread cauliflower and mint and ginger mix across the pan.

Cut beans, zucchinni and snow peas into small pieces and add to pan and stir through thoroughly.

Allow to cook for 3-4 minutes, tossing mix every minute or so.

Add chicken into pan, stir through and allow to cook for another minute or so.

Evenly distribute into three bowls or plates, top with some more mint and serve warm.

Strawberry and Banana Ice Cream

Ingredients (Serves 4)

3 Bananas
8 Strawberries
1 Tablespoon Natural Yoghurt
50 grams Fresh Blueberries
50 grams Fresh Raspberries

Cooking Instructions

Freeze Bananas for 2-3 hours.

Once frozen, place bananas, strawberries and yoghurt into a food processor and mix until mixture is completely smooth.

Place in freezer for another 2- 3 hours.

Scoop ice cream into bowl, drizzle with fresh berries and serve.

Please note: The ice cream in the diagram shown has been drizzled in home mode ice magic topping. To make this, mix 2 tablespoons of coconut oil, 1 teaspoon of cacao powder and a few drops of water. Drizzle over ice cream once in bowl and then place back into freezer for 2-3 minutes. Please also note that this will change the nutritional information to the following:

Snapper with Tomato and Cucumber Salsa

Ingredients (Serves 2)


300 grams Snapper
1 Cup Cherry Tomatos
1 Cucumber
20 grams Fresh Mint Leaves
1 Lime
2 Teaspoons Coconut Oil

Pre heat fry pan on low/medium and heat coconut oil over pan.

Place snapper fillets on pan and cook until outside turns to a golden brown colour.

Cut tomatos and cucumber into small cubes and then mix together with fresh lime juice.

Once snapper is cooked, place fillets onto plates and sprinkle tomato and cucumber mix over fish.

Top with mint leaves and serve.

A Gluten free chicken schnitzel

Ingredients


300 grams Chicken Breast (Skinless)
1/2 Cup Almond Meal
2 Teaspoons Fresh Thyme Leaves (Chopped Finely)
1 Teaspoon Lemon Zest
1 Small Egg
50 grams Gourmet Lettuce

Cooking Instructions

Pre heat a non stick fry pan on medium and pour olive oil onto pan.

Cut chicken breast down the middle to create 2 pieces of breast fillet.

Whisk egg into a small bowl and then grate the skin of 1 lemon and cut fresh thyme into tiny pieces and mix with almond meal.

Pour almond meal onto a plate.

One by one, place chicken breast in egg mix and then place onto almond meal to crumb the chicken before placing onto fry pan to cook.

Repeat the same step with other piece of chicken and then cook the schnitzels until breast is cooked through and the outside turns golden brown.

While chicken is cooking, cut carrot, cherry tomatoes, cucumber and capsicum (bell pepper) into pieces and mix with lettuce.

Zucchini and Mint Fritters

Ingredients (Makes 6 Large Fritters)


1 Large Zucchini
1/2 Cup Peas
4 Spring Onions
20 grams Fresh Mint
75 grams Almond Meal
3 Large Eggs
1 Teaspoon Lemon Zest
3 Tablespoons Tzatziki

Cooking Instructions

Grate zucchini into a bowl and then squeeze juice out of zucchini a handful at a time before placing into second bowl.

Cut mint and spring onions into thin pieces and then add into bowl with zucchini.

Whisk eggs in a bowl and then add peas, egg mixture, lemon zest and almond meal into zucchini mix and mix thoroughly.

Pre heat a non stick fry pan on medium for 3 - 4 minutes and then make fritters using a handful of mixture at a time.

Allow to cook for 3-4 minutes each side, then remove from pan, top with tzatziki and mint and serve.

Tomato, Mint and Salmon Salad

Ingredients (Serves 2)


1 Salmon Fillet
1 Bunch Fresh Mint
1 Packet Cherry Tomatos (150g)
1/2 Lebanese Cucumber
1/2 Red Capsicum (Bell Pepper)
1/2 Yellow Capsicum (Bell Pepper)
1 Teaspoon Reduced Salt Tamari Sauce

Cooking Instructions

Place salmon fillet into a plastic bag and marinate with 1 teaspoon tamari sauce, allowing to sit for minumum 20 minutes.

Pre heat a non stick fry pan to medium and once warm, place salmon fillet on pan and cook to your liking.

While salmon is cooking, cut tomatos in quarters and then cucumber and capsicum (bell peppers) into thin strips. Tear apart mint leaves from stalks and place everything into a large salad bowl, toss around and then distribute evenly into two bowls.

Once salmon fillet is cooked, cut in half, then cut into cubes and distribute into salad bowls.

Serve.

Coriander Scramble with Roast Mushroom

Ingredients (Serves 1)

1 Large Field Mushroom
2 Whole Eggs
1/4 Red Capsicum (Bell Pepper)
1/4 Yellow Capsicum (Bell Pepper)
1/4 Cup Fresh Coriander
4 Cherry Tomatoes
1 Spring Onion
1 Teaspoon Extra Virgin Olive Oil (Cold Pressed)

Cooking Instructions:

Pre heat oven to approxiametly 150 degrees celcius and place mushroom on a baking tray in oven.

While mushroom is baking, cut all ingredients into small pieces.

Whisk 2 eggs in a small bowl and pour one teaspoon olive oil onto a fry pan before pre heating the pan on low.

Pour chopped ingredients into egg mix and stir, then pour onto fry pan and cook on low - medium heat, stirring around to scramble as the eggs cook.

Once eggs are cooked, remove mushroom from oven and place onto a plate.

Slowly scoop scrambled eggs onto mushroom and then sprinkle with some fresh coriander to serve.

Swordfish with Zucchini and Butterbean Salsa

Ingredients (Serves 2)


300 grams swordfish fillets
200 grams Butter Beans
1 x Zucchini
1 x Large Tomato
1/2 Cup Fresh Spinach
1 x Clove Garlic
2 x Teaspoons Olive Oil
1 x Tablespoon Chopped Thyme

Cooking Instructions

Cut zucchini, tomato, spinach and garlic clove into tiny pieces. Pour 1 teaspoon of olive oil onto a pan and heat on low.

Pour salsa mix onto pan and slowly simmer, turning salsa every few minutes.

After allowing salsa to slowly simmer for approximately 20-30 minutes, pour butter beans into salsa mix and continue stirring. Heat a second pan on medium and pour a teaspoon of olive oil onto it. Place swordfish fillets onto pan and cook until each side turns golden brown.

Just before swordfish fillets are cooked, pour salsa into large bowls, then remove the swordfish fillets from pan and place on top of bean and salsa mix.

Cut rosemary into fine pieces and sprinkle over swordfish and serve.

Choc Peanut Butter Ice Cream

Ingredients (Serves 2)

2 Bananas
1 Tablespoons Organic Peanut Butter (No Added Sugar)
1 Tablespoon Cacoa Nibs

Peel bananas then place in a plastic bag and freeze.

Once bananas are frozen, place in food processor along with peanut butter and process until the mixture becomes thick and smooth.

Pour mixture into a plastic tub, add cacoa nibs and stir through.

Re freeze for a couple of hours and then take out of freezer 5 mins before serving. Scoop out using an ice cream scoop and serve.

Lemon Ginger and Chilli Chicken with Greens

Ingredients:

300 grams Chicken Breast
200 grams Fresh Spinach
1/2 Bunch Broccollini
150 grams Green Beans
1 x Small Red Chilli Pepper
1 x Small Green Chilli Peppper
1 x teaspoon Lemon Grass Paste
10 grams Fresh Ginger
1 Tablespoon Extra Virgin Olive Oil

Cut ginger and chillis into tiny pieces and mix into a bowl with olive oil and lemongrass paste.

Pour into a plastic bag and then put chicken breasts into the bag to marinate.

Pre heat a non stick fry pan on medium and once heated, place chicken breasts onto pan and cook until chicken is completely cooked through the middle.

Place beans in a pot of water and bring to the boil. Add broccollini to steamer while beans are boiling and steam for 2-3 minutes.

Remove chicken from the pan and place onto a plate. Once chicken is removed, add spinach to the pan with a tablespoon of water and toss until cooked.

Add vegetables to plate and serve.

Smashed Avocado with Watercress and Poached Egg

Ingredients (Serves 1)

1 x Egg
1/2 Avocado
1 x Slice Wholegrain Bread
2 x Teaspoons Weight Watchers Cottage Cheese
1 x Bunch Fresh Watercress
1 x Bunch Fresh Coriander
1/2 Fresh Lime (Juiced)

Add water into a saucepan until its 3/4 and slowly boil.

While water is boiling, scoop out half an avocado into a small bowl and mash. Once mashed, add 2 teaspoons of cottage cheese and squeeze the juice from half a lime in and mix through.

Place avocado mash aside.

Once water is almost boiled, turn gas onto low and allow to simmer.

Carefully crack egg into the saucepan and allow to cook for 2 - 3 minutes or to your liking.

While egg is cooking, place bread into toaster and once cooked, place onto a plate and cover with smashed avocado and then sprinkle with watercress and coriander.

Remove egg from water, drain if necessary, place on top of avocado and serve.

Chicken Pear and Goji Salad

Ingredients (Serves 2)

250grams Chicken Breast Fillets
1 x Pear (Sliced)
1 Tablespoon Dried Goji Berries
1 Tablespoon Walnuts
5 Asparagus Spears
40 grams Kale Mix
1 Tablespoon Balsamic Vinegar of Modena
2 Teaspoons Extra Virgin Cold Pressed Olive Oil



Cooking Instructions

Place chicken breast into a plastic bag and pour 1 tablespoon balsamic vinegar into bag to marinate. Leave for at least 30 minutes, the longer the better.

Once chicken is marinated, heat a non stick fry pan on low. Cut asparagus spears into small pieces and slowly cook until soft through middle, then place aside.

Pour olive oil onto pan and then place chicken on pan and turn up a notch. Cook chicken until breast is cooked through.

While chicken is cooking, cut pear into cubes and then mix into a small bowl with aparagus, goji berries and walnuts.

Layer 2 salad bowls with kale mix and once chicken is cooked, cut breast into thin strips and evenly distribute into the two bowls.

Sprinkle pear, goji, asparagus and walnut mix over salad to serve.

Almond and Coconut Chicken Stir Fry

Ingredients (serves 2)

200 grams Chicken Breast
1 Tablespoon Coconut Oil
1.5 Tablespoons Almond Butter
1/2 Small Spanish Onion
1 Head of Broccolli
100 grams Green Beans
150 grams Shitake Mushrooms
1 Red Capsicum (Bell Pepper)
1 Zucchinni
1/4 Cup Fresh Coriander
2 Tablespoons Coconut Flakes

Cooking Instructions

Cut all vegetables (except the shitake mushrooms and coriander) into small pieces and place in a bowl to the side.

Pre heat fry a large fry pan on low and melt coconut oil on it.
Once melted, pour vegetables onto pan, place lid over pan and allow to cook slowly, tossing vegetables every few minutes.

While vegetables are cooking, heat a seperate non stick fry pan and cook chicken breast.

Once chicken breast is cooked, cut into thin strips and then mix into stir fry along with almond butter, coriander and shitake mushrooms.

Turn the heat up to medium and mix thouroughly for 2 - 3 minutes.

Remove stir fry from pan, place into bowls or on plates and then sprinkle with coconut flakes to serve.

Mediterranean Fish Parcels

Ingredients (Serves 2)

400 gram white fish fillets
100 grams Sweet Potato
75 grams Cherry Tomatoes
1 Zucchini
50 grams Kalamatta Olives (Pitted)
2 Tablespoons Chopped Parsley
1 Tablespoon Lemon Juice

Cooking Instructions

Pre heat oven to 180 degrees celsius.
Slice sweet potato and place into a bowl with 1 tablespoon of water. Cover bowl and place in microwave for 2 minutes.

Cut 2 sheets of baking paper into 40cm squares.

Arrange sweet potato slices into centre of baking paper and top each with fish fillets, tomatoes, olives and parsley. Pour lemon juice over the top.

Fold paper to enclose filling and form a parcel, tucking in the ends to prevent any liquid from spilling.

Place parcels onto a baking tray and bake for 15-20 minutes or until fish is cooked.

Remove from oven, place onto a plate, unwrap the baking paper and serve.

This is a useful and easy to make pimple preventive and skin cleansing mask , with natural benefits of blemish lightening being an added advantage of this mask. Just take sour yogurt about 4 teaspoons and mix to it 2 teaspoons honey ( you may want to blend the honey with some 1 teaspoon of hot water to lessen it’s thickness ) and mix well . Use it on the face and leave on for about 15 minutes and wash off with lukewarm water in a scrubbing motion and splash with cold water or ice cold water. 5. Oat meal, Honey and Onion Mask-

Onion juice may sound as a very disgusting odour to some but this mask has great efficiency if you can really prepare and use it on skin tolerating the smell. Grate a small onion and get the paste sort of juice out of it about 4 tsp and on the other hand boil up some 1 cup of non sweet and non flavored, plain oat meal. When it’s cooked thoroughly, strain out the water and keep it to cool. In a grinder, mix up this cooked oat meal adding to it the onion paste with its juice to a fine paste. Now add 1teaspoon honey to it and mix it well. Apply on the skin for about 20-30 minutes and rinse off with plain water. If this mask proves beneficial to you may make this in increased quantity following the same ratios and store up the excess for upto 7 days in the refrigerator in an air tight container.

Tip for added benefits:
You can mix dry roasted and grinded clove powder about half a teaspoon to any of the above mixtures. And you may also mix 1 teaspoon of turmeric powder to the last pack as well.

How to maximise your chances of conceiving

Decided to try for a baby? Here are a few tips to help you get pregnant and get your pregnancy off to a good start.

Stop the Pill or contraception
Stopping the Pill does not mean you ovulate normally straight away, so don’t panic if you don’t get pregnant in the first three months.

Know your ovulation date
This is the time when your chances of getting pregnant are highest. It is generally around the 14th day after the start of your period. You can pinpoint it by measuring your temperature throughout your cycle.

Body temperature is higher just after ovulation. Note these details which will help you know your cycle and fertile periods better.

ovulation tests can also help, and are available in chemists. The advantages of these tests is that they tell you your ovulation day 1 or 2 days in advance so you can prepare for it. They are based on the concentration of hormones present in urine and are 96% reliable.

Have sex every 3 days
The life expectancy of sperm is around 72 hours once released into the genital cavity.

Most positions are fine!
Some suggest the missionary position however, no position has been proven to help the sperm reach the cervix quicker!

Women on top isn't the best for conception as gravity isn't helping the sperm reach its destination.

Pop a pillow under your bum
Doctors advise that you should pop a low pillow under your bottom after sex to raise your hips and give nature a helping hand my pointing the sperm in the right direction. The idea is that gravity sends the sperm down into your cervix and onwards towards the egg.

Stay like this from 20-30 minutes, after that you can go about your day as normal. You've given yourself the best chance.

You can also lie flat just don't go jumping about straight away.

Watch your diet

Eating healthily helps fertility. Low-calorie diets certainly help you lose weight but can have a hormonal impact on fertility, so stop any diet restrictions a few months before you want to get pregnant.

Too much sugar increases the production of adrenaline, the hormone that counter-acts progesterone, which prepares the uterus for pregnancy.

Coffee, alcohol and tobacco also have negative effects on fertilization.

The right season?!
fertility changes according to season! More sperm is produced at the beginning of spring and end of autumn. Sperm is more mobile at the end of summer and beginning of autumn. So it would seem that autumn and the beginning of winter are the best times for conception for men.

Watch your medication

Certain antalgics, such as non-steroid anti-inflammatory medications, affect the prostaglandin hormones that contract the uterus. See your GP, but it's best not to take them during ovulation.

Relax!

Always apply a natural lip balm to protect your lips. Applying it before applying lipsticks will prevent your lips from dryness and exfoliation.
Massage your lips with a soft toothbrush twice a day. Finish with lip balm or olive oil.

Brown sugar lip scrub recipe
1 tsp brown sugar

Carrot and sour-cream mask recipe
1 tsp carrot juice
1 tsp sour-cream

1/2 grated apple
